Grilling Vegetables

Preheat the Grill
Preheat your grill or grill pan over medium-high heat.

Prepare the Vegetables
Chop the bell peppers, zucchini, and red onion into bite-sized pieces.

Season the Vegetables
In a large bowl, combine the chopped vegetables with olive oil, salt, and black pepper. Toss to coat evenly.

Grill the Vegetables
Place the seasoned vegetables on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.
Preparing Beans and Rice

Combine Ingredients
In a medium saucepan over medium heat, combine the cooked brown rice and canned black beans.

Season
Add cumin, chili powder, and garlic powder to the rice and beans. Stir well to combine and heat through for about 5 minutes.
Assembling the Burritos

Warm the Tortillas
In a dry skillet, warm the flour tortillas for about 30 seconds on each side until pliable.

Fill the Tortillas
On each tortilla, layer a portion of the grilled vegetables, the beans and rice mixture, shredded cheese, and fresh cilantro.

Roll the Burrito
Fold in the sides of the tortilla and roll tightly from the bottom up to encase the filling.
