Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, combine the garlic (minced), cumin, chili powder, salt, black pepper, lime juice, and olive oil. Rub this mixture all over the pork pieces.

Cook the Pork
Place the seasoned pork in a slow cooker. Add the chopped onion and a splash of water. Cover and cook on low for 8 hours or high for 4 hours until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker to soak up the juices for about 10 more minutes.

In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
