    Marinate the Pork

    In a large bowl, whisk together the fresh orange juice, lemon juice, lime juice, orange zest, lemon zest, lime zest, minced garlic, grated ginger, honey, salt, and black pepper to create a marinade.

    Add Pork

    Place the pork shoulder in the marinade, ensuring it's well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Sear the Pork

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade for later) and sear the pork on all sides until browned, about 4-5 minutes per side. Remove the pork and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, sliced carrots, and chopped celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Combine Ingredients

    Return the seared pork to the pot. Pour in the reserved marinade and add the chicken broth and bay leaves. Bring to a boil.

    Braise the Pork

    Reduce the heat to low, cover, and let it braise for about 3 hours, or until the pork is tender and easily shredded with a fork.

    Serve

    Remove the pork from the pot and let it rest for a few minutes. Shred the pork using two forks, and return the shredded meat to the pot, mixing it with the sauce and vegetables. Serve warm.
