Prepare the Churro Dough

Combine Water, Butter, and Sugar
In a medium saucepan, combine 1 cup of water, 1 tablespoon of butter, and 1 tablespoon of sugar. Bring to a boil over medium heat.

Add Salt and Flour
Once boiling, add 1 teaspoon of salt and 1 cup of all-purpose flour. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.

Incorporate Eggs and Vanilla
Allow the dough to cool for a few minutes. Then, add 2 large eggs and 1 teaspoon of vanilla extract, one at a time, mixing well after each addition until the dough is smooth.
Prepare Cinnamon Sugar

Mix Sugar and Cinnamon
In a shallow bowl, combine 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Mix well to ensure an even distribution of cinnamon.
Fry the Churros

Heat Oil
In a deep pot or a deep fryer, heat 4 cups of vegetable oil to 375°F (190°C).

Pipe the Dough
Transfer the churro dough to a piping bag fitted with a large star tip. Once the oil is hot, carefully pipe 4-6 inch long strips of dough into the hot oil, cutting them off with scissors.

Fry Until Golden
Fry the churros for about 2-3 minutes on each side or until they are golden brown. Do not overcrowd the pan; fry in batches if necessary.
