    Prepare the Potatoes

    Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin rounds (about 1/16 inch thick).

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

    Heat the Oil

    In a large heavy-bottomed pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes.
