Method
Preparing the Chicken
- 1
Marinate the Chicken
In a bowl, combine olive oil, chili powder, cumin, garlic powder, paprika, salt, black pepper, and lime juice. Mix well.
- 2
Coat the Chicken
Add the chicken breasts to the marinade and ensure they are thoroughly coated. Cover and refrigerate for at least 30 minutes.
- 3
Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until cooked through and internal temperature reaches 165°F (75°C).
- 4
Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Making the Salsa
- 5
Combine Ingredients
In a bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, salt, and jalapeño (if using). Mix well and let it sit for about 10 minutes to allow the flavors to meld.
Assembling the Tacos
- 6
Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
- 7
Fill the Tacos
Slice the grilled chicken and place it on the warmed tortillas. Top with fresh salsa, avocado slices, and a dollop of sour cream.
