    Dissolve the rennet in about 1/4 cup of cool water. Add this mixture to the curdled milk and stir gently for about 30 seconds. Let it sit undisturbed for another 5-10 minutes.

Draining the Curd

    Lay out a piece of cheesecloth over a colander. Ensure that the cheesecloth hangs over the edges to catch the curds.

    Drain Curd

    Pour the curds and whey into the colander lined with cheesecloth. Let it drain for 10-15 minutes or longer for drier cheese.

Finalizing the Cheese

    Once drained, sprinkle the salt over the curds and mix gently to combine. If using herbs or spices, add them now to taste.

    Gather the cheesecloth and press it into a ball or shape of your choice. You can place a weight on top to help it firm up.
