    In a large heavy pot or Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove the ribs and set aside.

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened. Add minced garlic and cook for an additional minute.

    Return the seared short ribs to the pot, ensuring they are submerged in the liquid. Cover the pot with a lid, reduce the heat to low, and let it braise for about 2.5 to 3 hours, or until the meat is tender and falling off the bone.
