    In a pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and simmer for about 18 minutes or until the water is absorbed. Fluff with a fork and set aside.

    Prepare the Black Beans

    If using canned black beans, rinse them under cold water and heat in a saucepan over medium heat until warmed through. If using dried beans, soak and cook them according to package instructions.

    Make Dressed Greens

    In a bowl, combine your choice of greens (e.g., spinach, arugula) with olive oil, lemon juice, salt, and pepper to taste. Toss well and set aside.

    Heat the Refried Beans

    In a saucepan, heat the refried beans over medium heat until warmed through, stirring occasionally.

    Prepare the Toppings

    Chop the cilantro and dice the onion. Set aside for garnishing.
