Preparation and Baking
Make the Pie Crust
In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in vodka and apple cider until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
Prepare the Filling
In another bowl, mix sliced apples with brown sugar, cinnamon tincture, vanilla extract, nutmeg, and salt. Toss until apples are well coated.
Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disk of dough on a floured surface and place it in a 9-inch pie pan. Fill with the apple mixture, then roll out the second disk and place it over the filling. Seal and flute the edges, then cut slits in the top crust for steam to escape.
Bake the Pie
Sprinkle sugar on top of the crust if desired. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 45-50 minutes, until the apples are tender and the crust is golden.
Cool and Serve
Allow the pie to cool for at least 2 hours before slicing. Serve warm, optionally with vanilla ice cream.
