Preparation of Sweet Potatoes

    Peel and dice the sweet potatoes. Boil them in salted water until tender, about 10-15 minutes. Drain and mash slightly.

Braised Kale

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped kale, vegetable broth, salt, and pepper. Cook until the kale is tender, about 5-7 minutes.

Guajillo Salsa

    Prepare Salsa

    Remove stems and seeds from the guajillo chiles. Soak them in hot water for about 15 minutes until softened. Blend the chiles with tomato, onion, garlic, lime juice, and salt until smooth.

Cooking Eggs and Assembly

    In a separate skillet, scramble the eggs until cooked to your liking.
