Scramble the Eggs
In a medium bowl, whisk together the eggs, salt, and pepper. In a skillet over medium heat, melt the butter. Pour in the egg mixture and cook, stirring gently until the eggs are fully scrambled but still soft.

Warm the Tortillas
In another skillet, warm the flour tortillas over medium heat for about 30 seconds on each side, just until they are soft and pliable.

Assemble the Quesadilla
On one half of each tortilla, layer the scrambled eggs, salsa taqueria, and queso fresco. Fold the tortilla in half to create a quesadilla.

Cook the Quesadilla
Return the filled quesadilla to the skillet and cook on medium heat for about 2-3 minutes on each side, until the tortillas are golden brown and the cheese is melted.

Cut the quesadillas into wedges and serve warm with salsa roja and sour cream on the side.
