    Roast the Potatoes

    Preheat your oven to 425°F (220°C). Cut the potatoes into small cubes and toss them with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 25-30 minutes until golden and crispy, flipping halfway through.

    Cook the Eggs

    In a non-stick skillet over medium heat, cook the eggs sunny side up, about 3-4 minutes, until the whites are set but the yolks are still runny.

    Warm the Tortillas

    In a separate pan, warm the tortillas over low heat for about 1-2 minutes on each side until pliable.

    Assemble the Dish

    On each plate, place two tortillas, top each with sunny side up eggs. Drizzle guajillo salsa over one egg and verde salsa over the other. Sprinkle with queso fresco and serve alongside roasted potatoes.
