    Cook the Chorizo

    In a medium skillet over medium heat, add the chorizo sausage. Cook until browned and fully cooked, about 5-7 minutes. Remove from heat and set aside.

    Caramelize the Onions

    In the same skillet, add a little olive oil if needed and add sliced onions. Cook over low heat until they turn golden brown and soft, about 15-20 minutes.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    In a clean skillet, heat olive oil over medium heat. Pour in the egg mixture and let it cook undisturbed for a few minutes until the edges start to set.

    Add Fillings

    Once the eggs are mostly set, add the cooked chorizo, caramelized onions, roasted red peppers, and crumbled queso fresco on one half of the omelet.

    Fold and Serve

    Carefully fold the omelet in half over the fillings and cook for another minute. Slide it onto a plate and top with guajillo salsa to taste. Serve immediately.
