Method

Prepare Guajillo Salsa

  1. 1

    Toast and Soak Chiles

In a skillet over medium heat, toast the dried guajillo chiles for about 2-3 minutes until fragrant. Remove from heat, then soak in warm water for 15 minutes.

  2. 2

    Blend Ingredients

In a blender, combine the soaked chiles, tomato, garlic, onion, lime juice, and salt. Blend until smooth. Adjust seasoning as needed.

Cook Chorizo and Eggs

  1. 3

    Cook Chorizo

In a skillet, cook the chorizo over medium heat until browned and fully cooked, about 5-7 minutes.

  2. 4

    Scramble Eggs

Whisk the eggs in a bowl, then pour them into the skillet with the cooked chorizo. Stir gently until the eggs are fully cooked, about 3-4 minutes.

Assemble Tacos

  1. 5

    Warm Tortillas

In a dry skillet, warm the corn tortillas for about 30 seconds on each side until soft.

  2. 6

    Fill Tacos

Place a portion of the chorizo and egg mixture onto each tortilla. Top with guajillo salsa, crumbled queso fresco, and fresh cilantro.

  3. 7

    Serve

Serve immediately and enjoy your chorizo breakfast tacos!
