    Prepare the Pork

    In a large pot, add the pork shoulder and cover it with water. Bring to a boil, then reduce the heat to low and simmer for about 2 hours or until the pork is tender and can be easily shredded.

    Shred the Pork

    Remove the pork from the pot, let it cool slightly, then shred it with two forks. Reserve some cooking liquid to keep the pork moist.

    Cook the Eggs

    In a separate skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook to your desired level of doneness (sunny-side up, scrambled, etc.). Season with salt and pepper to taste.

    Assemble the Tortas

    On a plate, layer the shredded pork, cooked eggs, salsa taquera, chopped cilantro, diced onion, and crumbled queso fresco. Serve with additional salsa on the side if desired.
