    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat and add the potatoes. Season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until golden and tender.

    Scramble the Eggs

    In a bowl, whisk the eggs with a pinch of salt and black pepper. In the same skillet used for the potatoes, lower the heat and pour in the eggs. Cook, stirring gently, until the eggs are just set but still soft.

    Assemble the Burritos

    Lay a flour tortilla flat on a clean surface. In the center, layer a portion of the scrambled eggs, cooked potatoes, a spoonful of salsa taqueria, some shredded cheese, a dollop of sour cream, chopped cilantro, and diced onion.

    Wrap the Burritos

    Fold in the sides of the tortilla over the filling, then roll it from the bottom up to create a wrapped burrito. Repeat for the remaining tortillas.
