Combine and simmer
In a small saucepan, combine the coarsely chopped cucumber, sugar, and water. If using, add the lime zest. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves, about 3–4 minutes. Do not boil vigorously.

Infuse
Lower heat and simmer gently for 5 minutes to extract cucumber flavor. Remove from heat and let the mixture steep for 15–20 minutes for stronger flavor.

Strain and cool
Strain the syrup through a fine-mesh sieve or cheesecloth into a jar or bowl, pressing the solids to extract liquid. Discard solids. Cool to room temperature, then refrigerate until chilled. Yields about 3/4 to 1 cup of syrup. Keep refrigerated up to 7 days.

Prepare glass
If salting the rim, rub a lime wedge around the rim of a rocks or coupe glass and dip the rim into the coarse salt or salted rim blend to coat. Fill the glass with ice if serving on the rocks, or leave chilled if serving up.

Mix cocktail
In a shaker, add tequila (2 oz), fresh lime juice (1 oz), optional lemon juice (0.5 oz), orange liqueur (0.5 oz), and chilled cucumber simple syrup (0.75 oz). Fill the shaker halfway with ice.

Shake
Shake vigorously for 12–15 seconds until the shaker is thoroughly chilled and slightly frosted. This both chills and dilutes to balance the drink.
