Boil water

Measure 2 cups of fresh, cold water and pour into a kettle. Heat until it reaches a gentle boil (about 200°F / just off-boil). If using a stovetop kettle, bring to a rolling boil and remove from heat for 30 seconds.

Prepare coffee grounds

While the water heats, measure 2 tablespoons of freshly ground coffee (medium grind). If using whole beans, grind just before brewing to preserve aroma.

Bloom (for pour-over or drip)

If using pour-over or a French press, place the coffee grounds in the filter or press. Pour about 1/4 cup of the hot water evenly over the grounds, wetting them completely, and let sit for 30 seconds to de-gas (bloom).

Brew

After blooming, slowly pour the remaining hot water over the grounds in a circular motion (pour-over) or add the rest of the water to the French press. If using a drip machine, add grounds to the filter and start the machine. For French press, stir gently, place the lid with plunger up, and let steep for 3–4 minutes. For pour-over, allow all water to drip through (about 2.5–3 minutes total brew time).

Plunge or serve

If using French press, after 3–4 minutes, slowly press the plunger down. If using pour-over or drip, discard the filter and grounds. Pour the brewed coffee into a cup.

Customize and serve

Add milk or creamer (1 tablespoon) and sugar or sweetener (1 teaspoon) to taste. Optionally add a pinch of salt to reduce bitterness. Stir well and serve immediately.
