Prepare and dry shake
If using egg white: add 2 oz gin, 1/2 oz creme de violette, 1/2 oz fresh lemon juice, 1/4 oz simple syrup and the egg white to a cocktail shaker without ice. Dry shake vigorously for 15–20 seconds to emulsify and build foam.

Shake with ice
Add a large handful of ice to the shaker (enough to chill quickly). Shake vigorously for another 10–15 seconds until the shaker is cold to the touch and well aerated. If not using egg white, skip the dry shake and combine ingredients with ice, then shake 10–15 seconds.

Strain
Double-strain the cocktail into a chilled coupe or martini glass using a Hawthorne and a fine mesh strainer to remove ice shards and any large foam bubbles. The drink should have a pale violet hue and a delicate foam on top if egg white was used.

Notes
Creme de violette varies in intensity—adjust between 1/4–1/2 oz to taste if you prefer a subtler floral note. Use fresh lemon juice for best balance. If concerned about raw egg white, substitute 3/4 oz aquafaba (chickpea liquid) for a similar foam.
