Assemble the Enchiladas
Preheat your oven to 350°F (175°C). On a flat surface, place a tortilla and add about 1/4 cup of the shrimp mixture in the center. Roll the tortilla tightly and place seam-side down in a greased baking dish. Repeat for the remaining tortillas.

Make the White Sauce
In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 2 minutes until golden. Gradually whisk in chicken broth, stirring constantly until thickened, about 5-7 minutes. Remove from heat and stir in sour cream, diced green chilies, salt, and pepper.

Combine Sauce and Enchiladas
Pour the white sauce evenly over the assembled enchiladas in the baking dish. Sprinkle shredded cheese on top.
