    Prepare the Vegetables

    Clean and slice the mushrooms, onion, tomato, and bell pepper into thin strips.

    Heat the Olive Oil

    In a large skillet, heat olive oil over medium heat.

Cooking

    Sauté the Vegetables

    Add the sliced mushrooms, onion, bell pepper, salt, and black pepper to the skillet. Sauté for about 5-7 minutes or until the vegetables are tender.

    Add Tomato

    Add the diced tomato to the skillet and cook for an additional 2 minutes, until heated through. Remove from heat and set aside.

    Assemble the Quesadilla

    In the same skillet, place one tortilla and sprinkle half of the shredded cheese on one half of it. Add a portion of the sautéed vegetable mixture on top of the cheese, then sprinkle a little more cheese on top. Fold the tortilla over to create a half-moon shape.

    Cook the Quesadilla

    Cook the quesadilla in the skillet for about 3-4 minutes on each side until golden brown and the cheese is melted. Repeat the process for the other tortillas.

    Serve

    Cut the quesadillas into wedges and garnish with chopped cilantro if desired. Serve warm.
