Method

Preparation of Vegetables

    Grill the Vegetables

    Start by washing and slicing the bell pepper, red onion, and tomato into bite-sized pieces. Clean and slice the mushrooms. If using, slice the jalapeño into thin rings.

    Sauté the Vegetables

    In a skillet, heat a tablespoon of oil over medium heat. Add the sliced bell pepper, red onion, mushrooms, and jalapeño. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred. Add the diced tomatoes last and cook for another 2 minutes. Remove from heat.

Assembling the Nachos

    Layer the Nachos

    On a baking sheet, spread out the tortilla chips evenly. Top the chips with the sautéed vegetable mixture.

    Add Cheese

    Grate the cheddar and monterey jack cheese. Sprinkle the cheese generously over the layered vegetables and chips.

    Bake the Nachos

    Preheat the oven to 200°C (400°F). Place the baking sheet in the oven and bake for about 10-12 minutes or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the nachos from the oven, and garnish with fresh cilantro. Serve with dollops of sour cream and guacamole on the side. Squeeze fresh lime juice over the top before serving.
