Method

Prepare the Fish

  1. 1

    Season the Tilapia

In a bowl, combine cumin, chili powder, paprika, salt, and black pepper. Rub the spice mixture evenly over the tilapia fillets.

  2. 2

    Cook the Tilapia

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasoned tilapia fillets and cook for 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork. Remove from the skillet and set aside.

Prepare the Vegetables

  1. 3

    Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add sliced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are tender. Add minced garlic and cook for another minute until fragrant.

  2. 4

    Add Lime Juice

Squeeze the juice of one lime over the sautéed vegetables and stir well to combine.

Assemble the Fajitas

  1. 5

    Warm the Tortillas

In a separate skillet or microwave, warm the tortillas until they are soft and pliable.

  2. 6

    Fill the Tortillas

Place a portion of the sautéed vegetables and a piece of the cooked tilapia onto each tortilla.

  3. 7

    Add Toppings

Top each filled tortilla with sour cream, shredded cheese, and fresh cilantro.
