Preparation of Jalapeños

Prepare the Jalapeños
Preheat your oven to 375°F (190°C). Carefully slice each jalapeño pepper in half lengthwise and remove the seeds and membranes using a spoon. This will help reduce the spiciness.

Make the Filling
In a mixing bowl, combine cheddar cheese and cream cheese. Mix until well blended. Spoon the cheese mixture into each jalapeño half, filling them generously.
Making the Batter

Prepare the Batter
In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually add water to the dry ingredients, stirring until smooth.
Frying the Stuffed Jalapeños

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat and Fry
Dip each stuffed jalapeño in the batter, allowing excess to drip off. Carefully place them in the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Making the Avocado Crema Dressing

Prepare the Dressing
In a food processor, combine the avocado, sour cream, lime juice, garlic powder, and salt. Blend until smooth. Adjust seasoning to taste.
Serving

Assemble the Dish
On a serving plate, place a bed of lettuce and arrange the fried stuffed jalapeños on top. Drizzle with avocado crema dressing before serving.
