Method

Steak Preparation

  1. 1

    Prepare the Steak

In a bowl, combine olive oil, garlic powder, salt, and black pepper. Rub the mixture onto the beef steak. Allow to marinate for at least 30 minutes.

  2. 2

    Grill the Steak

Preheat the grill to medium-high heat. Grill the marinated steak for about 4-5 minutes on each side or until it reaches your desired level of doneness. Remove from grill and let rest for 5 minutes before slicing into strips.

Sauce Preparation

  1. 3

    Make the Sauce

In a blender, combine tomatoes, onion, green bell pepper, jalapeño (if using), cilantro, lime juice, salt, and pepper. Blend until smooth. Transfer to a saucepan and simmer over low heat for about 10 minutes to meld the flavors.

Sides Preparation

  1. 4

    Cook the Rice

In a pot, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and cook according to package instructions (usually about 15-20 minutes).

  2. 5

    Heat the Beans

If using canned black beans, drain and rinse them. Heat in a saucepan over medium heat until warmed through, about 5-7 minutes.

  3. 6

    Warm the Tortillas

In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until pliable and warm.
