Preparation

    In a mixing bowl, combine the shrimp, olive oil, salt, black pepper, garlic powder, cumin, and lime juice. Mix well to coat the shrimp evenly. Let it marinate for at least 15 minutes while you prepare the other ingredients.

    Slice the mushrooms and onion. Set aside.

Cooking

    Grill the Shrimp

    Heat a grill pan or skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and set aside.

    Sauté the Vegetables

    In the same pan, add a little more olive oil if needed, then add the sliced mushrooms and onions. Sauté for about 5-7 minutes or until they are softened and starting to caramelize.

    Assemble the Quesadillas

    Place a tortilla in the skillet over medium heat. On one half of the tortilla, layer some sautéed mushrooms and onions, grilled shrimp, and a generous amount of shredded cheddar cheese. Fold the tortilla over to cover the filling.

    Cook the Quesadillas

    Cook for about 2-3 minutes on one side until golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook for another 2-3 minutes on the other side. Remove from the pan and repeat with the remaining tortillas and filling.

Serving

    Cut the quesadillas into wedges and serve hot with optional toppings such as fresh cilantro, sour cream, and salsa.
