Prepare Seafood Mixture

    Cook the Seafood

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add minced garlic and sauté for about 30 seconds until fragrant. Add scallops and cook for 2-3 minutes until they start to brown. Add shrimp and cook for another 2-3 minutes until they turn pink. Finally, stir in the crab meat and cook for an additional minute. Season with salt and black pepper.

    Prepare the Chili Peppers

    While the seafood is cooking, prepare the mini chili peppers by slicing them in half lengthwise and removing the seeds. Set aside.

    Mix Seafood and Green Onions

    Once the seafood mixture is cooked, remove from heat and stir in chopped green onions. Let it cool slightly.

Make Drunk Sauce

    Combine Sauce Ingredients

    In a small bowl, combine mayonnaise, hot sauce, lime juice, tequila (if using), and chopped cilantro. Mix well until smooth and set aside.

Assemble and Bake Bites

    Fill the Chili Peppers

    Preheat the oven to 180°C (350°F). Take the prepared chili pepper halves and fill each half with the seafood mixture.

    Bake the Bites

    Place the filled chili peppers on a baking sheet lined with parchment paper. Drizzle with the remaining olive oil and bake in the preheated oven for about 15-20 minutes until the peppers are slightly charred and the seafood is heated through.

    Add Drunk Sauce and Cotija

    Remove the bites from the oven, drizzle with the drunk sauce, and sprinkle crumbled cotija cheese on top before serving.
