    Marinate the Ribeye

    In a bowl, combine olive oil, chili powder, cumin, salt, black pepper, and lime juice. Add the ribeye steak and ensure it is well coated. Cover and marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Grill the Steak

    Preheat the grill to high heat. Remove the ribeye from the marinade and place it on the grill. Grill for about 4-5 minutes per side for medium-rare, or longer if desired. Once cooked, remove from the grill and let rest for 5 minutes before slicing.

    Sauté the Vegetables

    In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add sliced onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized. Add minced garlic in the last minute of cooking.

    Assemble Fajitas

    Slice the grilled ribeye against the grain and add it to the sautéed vegetables. Toss everything together in the skillet for a minute to combine. Serve the fajita filling in warm flour tortillas.
