Prepare the Chicken

Season the Chicken
In a bowl, rub the chicken breasts with olive oil, salt, black pepper, and garlic powder until evenly coated.

Cook the Chicken
In a large skillet over medium heat, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the skillet and set aside.
Make the Ranchero Sauce

Sauté Onions and Garlic
In the same skillet, add 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes. Add minced garlic and cook for another minute.

Combine Sauce Ingredients
Add the canned diced tomatoes, chicken broth, chili powder, cumin, salt, and black pepper to the skillet. Stir well to combine.

Simmer the Sauce
Bring the mixture to a simmer. Lower the heat and let it cook for about 10-15 minutes, allowing the sauce to thicken slightly.

Finish the Sauce
Stir in the chopped cilantro and adjust seasoning if necessary. Remove from heat.
Combine and Serve

Top the Chicken
Return the cooked chicken breasts to the skillet and spoon the ranchero sauce generously over each piece.

Prepare for Serving
On each plate, serve with a portion of cooked rice, refried beans, and warm tortillas alongside the pollo ranchero.
