Method
Preparing the Chicken
- 1
Season the Chicken
In a large bowl, season the chicken breasts with salt, black pepper, and olive oil. Make sure to coat them evenly.
- 2
Cook the Chicken
Heat a skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until they are cooked through and no longer pink in the center.
- 3
Add Chipotle Sauce
Once the chicken is cooked, pour the chipotle sauce over the chicken breasts, ensuring they are well-coated. Let it simmer for about 3-4 minutes.
- 4
Top with Cheese Dip
After simmering, pour the cheese dip over the chipotle chicken and let it melt slightly for about 2 minutes.
Preparing the Sides
- 5
Cook the Rice
In a pot, combine 2 cups of water and 1 cup of rice. Bring to a boil, then reduce heat, cover, and let it simmer for about 15-20 minutes until the rice is tender and water is absorbed.
- 6
Heat the Beans
In a small saucepan, heat the black beans over medium heat until warmed through, about 5 minutes.
- 7
Warm the Tortillas
In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until soft and pliable.
Serving
- 8
Plate the Meal
On a serving plate, place a portion of the rice, black beans, and warm tortillas. Top with the chipotle chicken covered in cheese dip. Serve immediately.
