Preparation

    Prepare the Marinade

    In a bowl, mix lime juice, olive oil, cumin, chili powder, garlic powder, oregano, salt, and black pepper until well combined.

    Marinate the Meats

    Place the flank steak, chicken breast, shrimp, and carnitas in separate bags or containers. Pour the marinade over each meat and let it marinate in the refrigerator for at least 1 hour or up to overnight.

    Cook the Meats

    Heat a large skillet or grill over medium-high heat. Remove each meat from the marinade and cook separately until cooked through: flank steak (about 6-7 minutes per side), chicken breast (about 5-6 minutes per side), shrimp (about 2-3 minutes per side), and carnitas (just heat through).

    Sauté the Vegetables

    In the same skillet, add a little olive oil if needed, and sauté the bell peppers and onion until softened, about 5 minutes.

    Assemble the Fajitas

    Slice the cooked meats into strips. Lay out the flour tortillas and fill with a mix of the meats, sautéed vegetables, and desired toppings such as sour cream, guacamole, shredded cheese, and salsa.

    Serve immediately with lime wedges on the side for extra flavor.
