Preparation

    Marinate the Proteins

    In a bowl, marinate the ribeye steak and chicken breast in your favorite marinade for at least 30 minutes.

    Prepare the Shrimp

    Season the shrimp with salt, pepper, and a bit of lime juice. Skewer them with skewers and set aside.

    Slice the Vegetables

    Slice the mushrooms, bell peppers, scallions, and cactus into bite-sized pieces.

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and cooked through. Set aside.

Cooking

    Cook the Ribeye and Chicken

    In a hot grill or skillet, cook the marinated ribeye for about 4-5 minutes per side for medium-rare. Cook the chicken for about 6-7 minutes per side until fully cooked. Remove from heat and let rest before slicing.

    Grill the Shrimp

    Grill the shrimp skewers for about 2-3 minutes on each side until pink and opaque.

    Sauté the Vegetables

    In the same skillet, add a bit of oil and sauté the mushrooms, bell peppers, scallions, and cactus until tender, about 5-7 minutes.

Assembly

    Prepare the Molcajete

    In a preheated molcajete (or hot stone bowl), layer the cooked ribeye, sliced chicken, chorizo, shrimp, sautéed vegetables, and pour the red sauce over the top.

    Add Cheese and Toppings

    Sprinkle the grated Mexican cheese over the top and garnish with sliced avocado and grilled jalapeño.

    Serve

    Serve immediately with a side of cooked rice, beans, and warm tortillas.
