Method

Prepare the Ranchero Sauce

    Heat the Oil

    In a medium saucepan, heat the olive oil over medium heat.

    Sauté the Onions and Garlic

    Add the finely chopped onion and sauté until translucent, about 5 minutes. Then add minced garlic and sauté for an additional minute until fragrant.

    Add Tomatoes and Peppers

    Stir in the chopped tomatoes and diced bell pepper. Cook for about 10 minutes until the mixture thickens.

    Season the Sauce

    Add chopped cilantro, cumin powder, chili powder, salt, and black pepper. Stir well and let simmer for another 5 minutes. Remove from heat and set aside.

Cook the Eggs

    Heat the Pan

    In a non-stick skillet, heat butter or oil over medium heat.

    Fry the Eggs

    Crack the eggs into the skillet. Cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and black pepper.

Assemble the Dish

    Plate the Rice and Beans

    On a plate, serve a portion of cooked rice and a scoop of cooked beans.

    Add the Eggs

    Place the fried eggs on top of the rice and beans.

    Top with Ranchero Sauce

    Generously spoon the ranchero sauce over the eggs.

    Serve with Tortillas

    Warm the corn or flour tortillas and serve them on the side.
