For the Drunk Sauce
Method
Preparing the Stuffed Jalapeños
- 1
Preheat the Grill
Preheat your grill to medium heat (about 350°F or 175°C).
- 2
Prepare the Jalapeños
Slice each jalapeño in half lengthwise and remove the seeds and membranes to reduce heat.
- 3
Make the Filling
In a mixing bowl, combine the cream cheese, shredded cheddar cheese, garlic powder, onion powder, and black pepper. Mix until well combined.
- 4
Stuff the Jalapeños
Spoon the cheese mixture into each jalapeño half, filling them generously.
- 5
Wrap with Bacon
Wrap each stuffed jalapeño with a slice of bacon, securing it with a toothpick if necessary.
Grilling the Jalapeños
- 6
Place on the Grill
Place the wrapped jalapeños on the preheated grill. Close the lid and cook for about 15-20 minutes, turning occasionally, until the bacon is crispy and the jalapeños are tender.
- 7
Check for Doneness
Ensure the bacon is fully cooked and crispy. Remove the jalapeños from the grill and let them cool for a few minutes before serving.
Making the Drunk Sauce
- 8
Combine Ingredients
In a bowl, whisk together the mayonnaise, sriracha sauce, lemon juice, honey, garlic powder, and salt until smooth.
- 9
Adjust to Taste
Taste the sauce and adjust seasoning as needed, adding more sriracha for heat or honey for sweetness.
Serving
- 10
Serve with Sauce
Serve the grilled bacon jalapeños warm with the Drunk Sauce on the side for dipping.
