The Mexican take on Oysters Rockefeller, our grilled oysters are topped with your choice of bacon or chorizo, broiled cheese, & drizzled with our Drunk Sauce & jalapeños (available in 1/2 dozen or full dozen)

Preparation

    Prepare the Oysters

    Carefully clean the oysters under cold running water using a brush to remove any sand or debris. Discard any open oysters that do not close when tapped.

    Cook the Topping

    If using bacon, cook it in a skillet over medium heat until crispy, then crumble it. If using chorizo, cook it in the skillet until browned and crumbly.

    Make the Drunk Sauce

    In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in lime juice, tequila, hot sauce, salt, and pepper. Simmer for 2-3 minutes, then remove from heat.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Oysters

    Place the cleaned oysters on the grill with the cupped side down. Grill for about 5-7 minutes until they begin to open.

    Add Toppings

    Once oysters are slightly opened, remove them from the grill. Add the cooked bacon or chorizo on top of each oyster. Sprinkle shredded cheese generously over each topping.

    Finish Grilling

    Return the oysters to the grill and close the lid. Grill for an additional 3-5 minutes until the cheese is melted and bubbling.

Serving

    Serve the Oysters

    Remove the oysters from the grill and drizzle with the Drunk Sauce. Garnish with sliced jalapeños. Serve immediately.
