Rice and Beans
Method
Prepare Taco Fillings
- 1
Cook Chicken
In a skillet over medium heat, add 1 tablespoon of olive oil. Season the chicken breast with salt, pepper, cumin, and paprika. Cook for about 6-7 minutes on each side until cooked through and no longer pink. Remove from heat and let rest before slicing into strips.
- 2
Cook Steak
In the same skillet, add another tablespoon of olive oil if needed. Season the steak with salt, pepper, cumin, and paprika. Sear for about 4-5 minutes on each side for medium-rare, or longer for desired doneness. Remove from heat and let rest before slicing thinly against the grain.
- 3
Prepare Carnitas
If using pre-cooked carnitas, heat them in a separate skillet over medium heat until warmed through. If starting from raw, slow-cook pork shoulder with spices and lime juice until tender, then shred.
- 4
Cook Chorizo
In a skillet, crumble the chorizo and cook over medium heat for about 7-10 minutes until fully cooked and browned. Drain excess fat if necessary.
- 5
Prepare Rice and Beans
- 6
Cook Rice
In a pot, heat 1 tablespoon of olive oil over medium heat. Add garlic and diced onion, and sauté until soft. Add the rice and stir for about 2 minutes. Add 2 cups of water and salt to taste. Bring it to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes until the rice is cooked.
- 7
Prepare Beans
If using canned black beans, rinse and drain before heating. In a small saucepan, combine the black beans with a splash of water and cook over low heat until warmed through. Season with salt to taste.
