    Prepare the Ingredients

    Wash and slice the vegetables. Dice the tomatoes, onions, bell peppers, and mushrooms.

    Cook the Protein

    In a skillet over medium-high heat, add olive oil. Add the diced steak or chicken and sprinkle with fajita seasoning, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from heat.

    Grill the Vegetables

    In the same skillet, add a little more olive oil if necessary. Add the sliced onions, bell peppers, and mushrooms. Sauté until they are tender and slightly caramelized, about 5 minutes.

    Layer the Nachos

    On a large baking sheet, spread out the tortilla chips evenly. Sprinkle half of the shredded cheese over the chips.

    Add Toppings

    Layer the cooked protein over the chips, followed by the grilled vegetables. Add the remaining cheese on top.

    Bake the Nachos

    Preheat your oven to 350°F (175°C). Bake the nachos in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove the nachos from the oven and garnish with diced tomatoes, sour cream, guacamole, and chopped cilantro. Serve immediately.
