Preparation

    Prepare the Chicken Filling

    In a bowl, combine the shredded cooked chicken with 1 cup of red enchilada sauce. Mix well and set aside.

    Prepare the Tortillas

    In a skillet, heat olive oil over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until pliable. Remove and drain on paper towels.

Assembly

    Fill the Tortillas

    Take a tortilla, add about 2-3 tablespoons of the chicken filling in the center, and roll it up tightly. Place seam side down in a baking dish.

    Add Sauce and Cheese

    Once all tortillas are filled and placed in the baking dish, pour the remaining red enchilada sauce over the top. Sprinkle with shredded cheese.

Baking

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Bake the enchiladas for about 20 minutes or until the cheese is melted and bubbly.

Serving

    Plate and Serve

    Serve the enchiladas hot, alongside cooked rice and refried beans. Top with shredded lettuce, a dollop of sour cream, and a slice of tomato.
