Cheese Dip

Prepare the Base
In a mixing bowl, combine cream cheese, shredded cheddar cheese, sour cream, diced jalapeños, garlic powder, and salt. Mix until well combined.

Heat the Mixture
Transfer the mixture to a saucepan and heat over medium-low heat, stirring occasionally until the cheese is melted and the dip is smooth. This should take about 5-7 minutes.

Serve
Once melted and smooth, remove from heat and serve warm.
Guacamole

Mash the Avocados
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash with a fork until smooth.

Add Ingredients
Stir in lime juice, diced tomato, chopped red onion, chopped cilantro, and salt. Mix until combined but still chunky.

Serve
Transfer to a serving bowl and serve with tortilla chips or fresh veggies.
Choriqueso or Bola Chile

Cook the Chorizo
In a skillet over medium heat, add olive oil and cook the chorizo sausage until browned and fully cooked, about 6-8 minutes.

Add Poblano Pepper
Stir in the diced poblano pepper and cook for an additional 2-3 minutes until softened.

Add Cheese
Reduce heat to low, then add shredded Monterey Jack cheese and stir until melted and creamy, about 3-5 minutes.

Transfer the choriqueso to a serving dish and enjoy warm with tortilla chips.
