Marinade Preparation

    Prepare the Marinade

    In a medium bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper until well combined.

    Marinate the Seafood

    Add the shrimp and scallops to the marinade. Toss to coat evenly and let marinate for at least 30 minutes in the refrigerator.

    Sauté the Vegetables

    In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the sliced bell peppers and onions. Sauté for about 5-7 minutes until they are tender and slightly charred. Remove from skillet and set aside.

    Cook the Seafood

    In the same skillet, add the marinated shrimp and scallops. Cook for about 4-5 minutes, stirring occasionally, until the shrimp are pink and the scallops are opaque. Do not overcook, as seafood can become rubbery.

    Add the sautéed vegetables back into the skillet with the seafood. Stir to combine and heat through for an additional 1-2 minutes.

    Serve the Fajitas

    Warm the flour tortillas in a dry skillet or microwave. Serve the shrimp and scallop mixture in the tortillas, garnished with sour cream, guacamole, chopped cilantro, and lime wedges on the side.
