Prepare the Ingredients
Chop the green onions, red bell pepper, and fresh cilantro. Set aside.

Mix the Filling
In a large mixing bowl, combine the cooked crab meat, shredded Monterey Jack cheese, shredded cheddar cheese, chopped green onions, chopped red bell pepper, chopped cilantro, garlic powder, cumin, salt, and black pepper. Mix well until all ingredients are evenly combined.

Heat the Pan
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble the Quesadilla
Place one flour tortilla in the skillet. Spoon half of the crab mixture onto one half of the tortilla, then fold the other half over the filling.

Cook the Quesadilla
Cook the quesadilla for about 3-4 minutes on one side, or until golden brown. Flip carefully and cook for another 3-4 minutes on the other side, until the cheese is melted and the tortilla is golden.

Repeat for Second Quesadilla
Remove the cooked quesadilla from the skillet and keep warm. Add another tablespoon of olive oil to the skillet and repeat the assembly and cooking steps for the second quesadilla.

Once both quesadillas are cooked, cut them into wedges and serve warm with salsa or guacamole if desired.
