Chips and Sauce

Heat Sauce
In a large skillet, heat the red enchilada sauce over medium heat until simmering.

Prepare Chips
Add the tortilla chips to the skillet and gently stir to coat them in the sauce. Cook for 2-3 minutes until chips are slightly softened but still crunchy.
Toppings

Add Chicken
Once the chips are coated in sauce, sprinkle the shredded chicken evenly over the top.

Melt Cheese
Sprinkle shredded cheese over the chicken and cover the skillet for 2-3 minutes until the cheese is melted.

Garnish
Remove from heat and garnish with fresh cilantro and a dollop of sour cream.
Guacamole Salad

Make Guacamole
In a medium bowl, combine mashed avocado and lime juice. Mix well until smooth.

Add Vegetables
Fold in diced tomato, red onion, and salt to taste. Set aside.
Rice

Rinse Rice
Rinse the white rice under cold water until the water runs clear.

Cook Rice
In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil.

Finish Cooking Rice
Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
