Soup Preparation

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Add Chicken and Broth

    Add the boneless chicken pieces to the pot, followed by the chicken broth. Bring to a boil.

    Add Vegetables

    Once boiling, add the diced potatoes, sliced carrots, green beans, and chayote. Stir to combine.

    Season the Soup

    Add the salt, black pepper, dried thyme, and bay leaves. Reduce the heat to low and let it simmer for about 30 minutes, or until the chicken is cooked through and the vegetables are tender.

    Shred the Chicken

    Remove the chicken from the pot, shred it with two forks, and return it to the soup. Let it simmer for an additional 10 minutes.

Serving Instructions

    Prepare the Rice

    In a separate pot, prepare the cooked rice according to package instructions.

    Serve the Soup

    Ladle the chicken soup into bowls over a scoop of cooked rice.

    Garnish

    Top each bowl with chopped cilantro and diced onions.

    Serve with Tortillas

    Serve the soup with warm corn tortillas on the side.
