Preparation

    Prepare the Seafood

    If using shrimp, peel and devein the shrimp. If using tilapia, cut the fish into small cubes. Rinse under cold water and pat dry.

    Marinate the Seafood

    Place the prepared shrimp or tilapia in a glass bowl. Pour fresh lime juice over the seafood until completely submerged. Add salt and black pepper. Cover and refrigerate for 30 minutes to 1 hour until the seafood is opaque and 'cooked' by the lime juice.

Mixing Ingredients

    Chop Vegetables

    While the seafood is marinating, finely chop the red onion, tomato, and cilantro. Set aside.

    Combine Ingredients

    Once the seafood is marinated, drain a little of the lime juice if desired, then add the chopped onion, tomato, and cilantro to the bowl. Mix gently to combine all ingredients.

Serving

    Prepare Avocado

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices or cubes.

    Plate the Ceviche

    Serve the ceviche in individual bowls or on a large platter. Top with avocado slices or cubes. Optionally, garnish with extra cilantro.
