Preparing the Rice

Cook the Rice
In a saucepan, combine 1 cup of long-grain rice, 2 cups of water, and salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.
Cooking the Shrimp and Vegetables

Season the Shrimp
In a bowl, combine the shrimp with olive oil, minced garlic, chili powder, cumin, salt, and black pepper. Toss until the shrimp are well coated. Let it marinate for 10 minutes.

Grill the Vegetables
In a large skillet or grill pan over medium heat, add the sliced bell peppers, onions, and diced tomato. Sauté for about 5 minutes until they are softened but still crisp. Remove from heat and set aside.

Cook the Shrimp
In the same skillet, add the marinated shrimp and cook for 3-4 minutes on each side until they are pink and cooked through. Stir in the grilled vegetables and mix to combine.
