Method
Camarones al Mojo de Ajo

Prepare the Shrimp
Peel and devein the shrimp, then rinse under cold water and pat dry.

Make the Garlic Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Cook the Shrimp
Add the shrimp to the skillet. Season with salt, black pepper, red pepper flakes, and lemon juice. Cook for about 3-4 minutes, stirring occasionally, until the shrimp turn pink and opaque.

Finish with Herbs
Remove from heat and stir in the chopped parsley. Set aside.
Guacamole Salad

Prepare the Avocado
In a mixing bowl, mash the ripe avocados with a fork until creamy but still chunky.

Combine Ingredients
Add diced tomatoes, red onion, lime juice, chopped cilantro, and salt to the mashed avocado. Mix until well combined.

Chill and Serve
Cover with plastic wrap and let it chill in the refrigerator until ready to serve.
Pico de Gallo

Mix Ingredients
In a bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, lime juice, and salt. Stir to combine.

Adjust Seasoning
Taste and adjust seasoning if necessary. Let it sit for a few minutes for the flavors to meld.
Sour Cream

Serve Sour Cream
Place sour cream in a serving bowl and set aside for serving.
Rice

Rinse the Rice
Rinse the white rice under cold water until the water runs clear.

Cook the Rice
In a pot, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.

Fluff and Serve
Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
