Method

Preparing the Camarones a la Diabla

  1. 1

    Cook the Shrimp

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 2

    Add Spices

Stir in the dried red chili flakes and chipotle peppers, cooking for an additional minute.

  3. 3

    Add Tomato Sauce

Pour in the tomato sauce, lime juice, salt, and black pepper. Stir to combine and let simmer for 5 minutes.

  4. 4

    Cook Shrimp

Add the shrimp to the sauce and cook until they turn pink and opaque, about 4-5 minutes.

Making the Guacamole Salad

  1. 5

    Prepare Avocados

In a bowl, mash the ripe avocados with lime juice until smooth.

  2. 6

    Combine Ingredients

Add diced red onion, tomato, cilantro, and salt to the mashed avocados. Mix until well combined.

Cooking the Rice

  1. 7

    Rinse Rice

Rinse the long-grain rice under cold water until the water runs clear.

  2. 8

    Cook Rice

In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.

Preparing the Pico de Gallo

  1. 9

    Combine Ingredients

In a bowl, combine the diced tomatoes, red onion, minced jalapeño, cilantro, lime juice, and salt. Mix well.
