Soup Preparation

    Brown the Beef

    In a large pot over medium-high heat, add the beef cubes and sear them until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté Onions and Garlic

    In the same pot, add chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

    Combine Ingredients

    Return the browned beef to the pot. Add beef broth, water, salt, black pepper, and bay leaves. Bring to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and cover the pot. Let it simmer for 1 hour, stirring occasionally.

Adding Vegetables

    Add Vegetables

    After the soup has simmered for 1 hour, add diced zucchini, potatoes, chayote, and green beans. Stir well to combine.

    Continue Cooking

    Cover the pot again and let the soup simmer for an additional 30-40 minutes, or until the vegetables are tender.

Serving

    Prepare to Serve

    Once the soup is ready, taste and adjust seasoning if necessary. Remove bay leaves before serving.

    Ladle soup into bowls and serve hot alongside cooked rice, chopped cilantro, finely chopped onions, and tortillas.
