    Prepare the Ingredients

    Gather all ingredients. If using fried chicken, shred it into bite-sized pieces. Dice the avocado and set aside.

    Make the Pico de Gallo

    Combine diced tomatoes, onions, cilantro, lime juice, salt, and pepper in a bowl to make fresh pico de gallo.

    Assemble the Burrito

    Lay a large flour tortilla flat on a clean surface. In the center, layer the ingredients: 1/2 cup cooked rice, 1/2 cup shredded fried chicken, 1/4 cup shredded cheese, 1/4 cup pico de gallo, a handful of lettuce, and a few slices of avocado.

    Add Baja Sauce

    Drizzle about 2 tablespoons of Baja sauce over the layered ingredients.

    Wrap the Burrito

    Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.

    Heat a grill or skillet over medium heat. Place the wrapped burrito seam-side down and grill for about 2-3 minutes on each side until golden brown and crispy.
